Can I recover the original variable names?

Not from a minified file. Shortening names is a lossy step, so a variable called a in the bundle was called something else in the source. Formatting restores the structure, not the names or the comments.

Is it safe to format proprietary code here?

Yes, because the transformation happens entirely in your browser. Nothing is uploaded, which is what makes this a workable way to inspect a third party bundle you cannot rebuild from source.
